I'm not a big fan of simulated knobs for controlling things like sens. They're hard to use with a mouse/trackpad: Where do you grip it? Do you turn it left/right or up/down? From where to where? How do you set a specific value with a single click—is that even possible?
In my opinion, a slider whose design clearly shows where to touch and in which direction to move the mouse is better. Best with "move fader to clickposition" feature, this allows to change eg. volume with one click.
