I made vegan Pelmeņi! (aka pierogi or varenyky depending on where you're from)
I wouldn't normally fry them but my husband likes fried ones more and I thought it was fitting with the filling from the receipe (potato, mushrooms and sauerkraut). But I need to find the vegan receipe I originally used, I like the dough better.

What's your current recipe for the dough?

My son is allergic to milk and eggs, so I've learned the "vegan" pelmeni/vareniki dough a long time ago: it basically involves putting hard boiling water into the 1/2 of the flour (+ salt), mixing, then adding the rest of flour, kneading and waiting 30 minutes for it to rest (covered). It's super elastic, glues together really well and doesn't fall apart when cooking.

Still a lot of work though, no way around that πŸ˜
