I have been doing experiments with my vegan yoghurt, using Miyoko's recipe as the base.
I added 1/2 cup of rolled oats, cooked until super stodgy and blended with the cashews and soy milk. It's so much thicker than usual!
I had a confounding factor, in that I ran out of hone yoghurt and had to use supermarket coconut yoghurt as the inoculant, so the fat may have helped thicken. Although that's only a small amount in the batch overall.
I'll try again with home yoghurt in two weeks.
