You want a cheap, easy meal to serve 4? Healthy protein, vegetables, and whole grain?

Get out your InstaPot, set it to sauté, and add one to 2 tablespoons of olive oil. When the oil gets hot, brown about 1 kg of boneless, lean pork. I used a pork loin I bought on sale yesterday for $7. Add one small cabbage, quartered, core removed. Add two onions, roughly chopped. Add two apples, peeled, cored, and cut into eighths. (1/2)

Put the cover on, switch to pressure cook, and cook for 45 minutes. Let the steam naturally release for about 10 minutes, then open. The vegetables will have created their own juice. Cut or shred the pork. Serve over brown rice.

I figure this costs less than $12 to make 4 servings. I ate one serving for dinner and will vacuum seal and freeze the rest. My house smells delicious. (2/2)

@mlanger
Unfortunately, our house stinks!

Came home from our trip #dogsitting in the #NewForest last week to a foul odour.

Know from experience that some creature has died somewhere within the fabric of the #building and it could take up to six #weeks for the #smell to clear.

@mlanger Gonna have to try that, but in my dutch oven since I don't have an InstaPot.

@frog I think it could be done in a slow cooker, too. Just adjust the cooking time. If you overcook it, the apples will literally disappear. If you undercook it, the pork won't shred. There's no need to add any liquid -- at least not in the InstaPot and probably not with a very tight fitting lid.

My grandfather used to make something like this but added caraway seeds; I don't think he put the apples in.

@mlanger I figure I'll just simmer it until the apples are al dente.
