If there were 10,000 Jedi, it might be quite reasonable for a hundred or more to survive, which is plenty to cover quite a lot if story.

What was the population of the Republic/Empire?

Trantor, sorry, Coruscant had over a trillion, and there seem to be numbers of 100 quadrillion floating around.

Sure, it's all magic, but 1 Jedi per 10^13 or so citizen-subjects seems a little light.
