The second phase of making the lactic acid bacteria (LAB). Adding the pure stock 1:10 to whole milk. After a few days to a week three layers will form.

A cheese layer on top, a sediment layer on the bottom and a layer of LAB in the middle. The top and bottom layers are added to the compost. The middle layer will be mixed 1:1 with unrefined brown sugar to make a shelf stable LAB for use as a multi purpose garden amendment.
