If I want a good, quiet and customisable #mechanicalKeyboard, should I try to live with ANSI layout, or are there any sensible ISO options? My initial research suggests that ISO ones are really hard to find, even in Europe.

There are many ISO, actually.
I've bought my Filci Malestouch 2 TKL, with even Italian layout, at https://www.keyboardco.com/
You might also find QMK-based keyboards that you can customize with layers and the like.
Another quite good one I had was the GMMK 1: https://www.gloriousgaming.com/en-eu with now some more modern things. Here I've bought the barebone one (without keycaps) and then bought a custom set somewhere else.
