My work moved to Jira cloud recently and I've just discovered that Atlassian has removed the ability to see or write in plain text.

I cannot put into words just how jarring this is to my workflow. I don't want to see "rich text," I want to see exactly what I write represented as I've written it. I don't need or want Atlassian to hold my hand; if I want a link, I will make a link. How insulting.
