I'm experimenting with a local instance for my small town, and I have the same problem. I wish the Mastodon frontend and app could be rebranded more easily, but the second best solution would be what @CleoMenezesJr proposes.
@stefan's tool looks good, but I guess it's still too complicated for many.
Most people in my community don't really need to know the name of the server backend system (Mastodon).
That's just what Mastodon, the company, chose to name their community, hosted on a server, which is running the Mastodon software.

You can’t even tell it’s #Mastodon under the hood. It’s terrible advertising for us and we love it 😉
