I tried making vegan raclette cheese today. I know, why would I do such a thing? Let's just say I had my reasons. The most promising recipe I could find was in French (because of course it was) in this video:

Luckily my French is still just barely good enough to understand the recipe. It uses cashew, soy milk, oil, nutritional yeast, white miso, starch, and some spices. Oh and it uses both wine AND beer (that's how I knew it would be good).

Would it have fooled anyone? Hell no, the texture was okay but still very far from the real thing.

Did it taste good anyway? Absolutely, the combination of different taste makers made the whole quite interesting.

Did I have a lot of fun making it? You bet I did.

(any potential analogies between vegan cooking and LLM-free programming are left as an exercise to the reader.)
