A soft washed-rind cheese with a soft pinkish-orange rind. Made from the milk of Brown Swiss cows, in the Saguenay-Lac-Saint-Jean region of Quebec. The paste is silky and can become quite soft and oozing as it ages, with a gently pungent flavour, which becomes more pronounced when ripe. Available in foodservice and retail sizes.
