I took another look at this because I wanted to be clear just how impactful this partnership is and my assessment today is this:
The UAE - much like SF billionaires - invested into Mistral with the intent for help with * regional products*.
The actual IP on *models* is still with Mistral.

I hope that @MistralAI will eventually make it *easy* for end users to ensure that all data (without exceptions for high demand) is processed in Europe - its only straightforward for enterprise as of today.

And if I am not mistaken, one way to ensure that Mistral does NOT use non-European servers is to have the 'Flash Answers' toggled off - hence it being listed under 'Privacy' I imagine.
But that doesn't mean that they will only use EU-infra either, if I go that right:
