@rsanders @ai6yr @3janeTA Almost 14% protein. Should be excellent for pizza dough. I usually use the KAF bread flour which is also high protein. Good gluten, nice and stretchy.

@CavedaleRhones @ai6yr @3janeTA I use Janies for a few reasons, and KAF is good flour:

Buying in 10 lb and 20 lb bags gets the price lower and I have freezer space to store.

I found their rolled oats taste better than Bob's Red Mill.

I like that I can mix their bread flour, spelt, and Red Fife when making bread. 6 oz, 5 oz, 5 oz. I like that flavor.

Their all-purpose flour makes pretty good gravey and red chile sauce.

I've got maybe 10 yrs left +/-, so flavor and enjoyment tops price to some extent.

Supporting a small, organic, farm is a fine thing.
