@jdw best from privacy perspective would be a computer that you already own (or can buy - MiniPCs are good option) placed at home/secure place.

If you go with VPS, there not so many providers offering NixOS, but nixos-anywhere would solve this issue (it requires at least 1GB of RAM, but better 2)
