I just have all these bits of knowledge that feel very scattered and I want to ask some questions to connect them, but want the “explain like I’m 5” response. Just a no stupid questions environment would be awesome. Nix feels so slick when it works, but growing the complexity of my system has run me into the roadblocks.

@FlorentBecker All of this would be in service of me helping my family ditch corpo OS options. Basically able to build them each a custom DE that will work just as they like it forever that I can update and modify with pushes to a git server.
@Arkhive have you looked at https://www.gaminglinux.fr/glf-os/ ? As far as I understand, it's supposed to be a zero-maintenance Nixos based OS. Even if it's unfit for you as is, they've probably had to think about some of the challenges you're tackling.
