Sheet Pan Teriyaki Salmon

Buttery salmon with sweet and savory teriyaki flavor.

SERVES: 4
EACH SERVING: 1 salmon fillet, about 1 cup vegetables
ACTIVE TIME: 10 min
TOTAL TIME: 25 min

◦ 1 pkg (20 oz) sliced white mushrooms, washed
◦ 1 red Bell pepper, cored, seeded, thinly sliced
◦ 2 tbsp basting oil
◦ 3/4 cup teriyaki sauce
◦ 4 (6 oz each) Atlantic salmon fillets
◦ Salt and pepper to taste

1. Preheat oven to 450°F.
2. Place mushrooms and peppers in middle of parchment paper-lined baking sheet; drizzle with basting loil and teriyaki sauce. Toss to coat.
3. Season both sides of each salmon with salt and pepper. Arrange salmon in center of baking sheet skinned-side down. Arrange vegetable mixture around salmon.
4. Roast about 15 min until internal temp reaches 130°F (check by inserting thermometer halfway into thickest part of fish).
5. Let rest 2 min; serve.
