Quickest and easiest #healthy #recipe I’ve ever made, and it’s darn #delicious and obviously #plantbased.

3 Tbsp red lentils
3 Tbsp white rice
1 Tbsp curry spice mix of your choice
1 Tbsp coconut oil
Salt
Optional: leftover greens in your kitchen, diced

Wash lentils and rice together, throw into pot, cover with water- at least one finger’s phalanx, better two or three.
Add rest of ingredients.
Bring to boil, let simmer 20min.

Took it to work plain and without veggies.
Just warmed up the rest for dinner, added some Veta, sweet- sour sauce and edamame.
