Hey, while everyone else is enjoying either sports or amazing pictures of owls, here's what I'm doing this afternoon:

  • diced onion, minced garlic
  • ground lamb and beef

  • tomato paste

  • Blend of cumin, coriander, salt, black pepper, thyme, cayenne, smoked paprika, sugar, cinnamon, bay leaf

  • white wine and beef broth

  • cilantro, whole pine nuts, diced tomatoes

  • Blend of ground pine nuts, powdered sugar, cinnamon, salt

  • phyllo pastry

  • melted butter

What will it be?

Sautee the onion and garlic, then cook the meat with them. Stir in the tomato paste and spices and cook briefly. Add the wine and broth, then leave to simmer for half an hour.
Add the cilantro, tomatoes, and pine nuts cook for several more minutes, then set aside to cool.
Layer a deep dish pan with phyllo, butter, and pine nut/sugar mix. Fill with the meat mixture, then top with more layers of phyllo, butter, and pine nut/sugar.
