Roast chicken in a tagine was not very interesting. Had the flavour of poached chicken rather than roasted. Sure, it was tender and succulent, but largely lacking in that deep umami flavour of a good roast chicken. I could have added a shit ton of spices (it was my first time, so I didn't), but I'm not sure it would be worth the effort. #cooking #tagine
