Today’s #tangzhong sourdough loaf was sacrificed to an impromptu meal with my dad and his wife—hence, no crumb shot. I do, however, declare it the best sourdough loaf I’ve ever made. The crumb was so fluffy and tender. It was unmistakably my sourdough, but the flavor was sublimely delicate. The crust was crisp but not tough.
