@RobotDiver Not exactly a casserole, but an easy one-dish meal is to keep refried beans in the freezer so you can do a burrito bowl when avocados are on sale (they can get pretty expensive where I live).

Brown rice, refried beans, tomatoes, avocado, cheese, sour cream if you have it, maybe sweet potatoes and whatever other toppings you like. Throw it into a bowl, heat it up.

@RobotDiver this got me through college:
Bake a bag of potatoes (instapot, oven, microwave, whatever works!), slice them up into disks and put in a 9x12 pan. Shove as much butter as you can between the rows of potatoes. Cover with 1-2 cans of cream of chicken soup. If you have cheese, cover it with cheese. Bake at 400 F or so for 1/2 hour. Mostly you want to make sure it's warmed and the creamy soup and cheese have browned. Try not to eat it all in one go! :D
