First breakfast back at home: rolled oats topped with a fried egg and with smoky dashi and soy sauce poured all over. Then I added some chilli crisp on top of the egg. Because one of the pleasures of home is having all my condiments and not being bound by other people’s idea of breakfast.

I “invented” oatmeal with soy sauce, an egg, and green onions back when I was lifting weights. But really I just worked out the same principle as congee except with oats instead of rice. If you don’t have already made rice porridge, oatmeal is a lot faster and satisfies a similar need for mild and soft staple. #food

Some years ago when I worked in the Financial District in SF there was a lunch place that had congee for lunch. They served it with smoked duck, a poached egg, slivers of fresh ginger, and scallions. Those lunch places turned over a lot, and also they didn’t always have the congee. I still think about how good it was. I can make it myself but part of the fun is just having a food that’s ready and perfect that would take a lot of planning and prep.

I mostly make congee at home when I’m sick, though, so then I do the most low effort versions possible. #food
