If they are fabulous do. You replace caning on a chair the same way you replace a screen in a window.
First you figure out how it was mounted before. Then decide the pattern you want.

If the caning is in good condition, a little cleaning might be enough.
If it is dry, but not cracked, re-humidifying might be good.
If it is cracked, broken or just glued on, it is not good.
