#knitting question- how do i take a finished piece of knitting off the needles but not let it unravel? Ideally i would love a tutorial that shows pictures. Would accept a video in a pinch.

Is this “casting off”?

Alternatively, how do i add a new piece of yarn so i can keep knitting? I have about half a functional scarf, but plenty more yarn

The preferred term is "binding off", but casting off works.

There are, like almost all things knitting, oodles of methods to bind off. The most basic one is:

1. k2, slip second stitch over first stitch, * k1, slip second stitch over first, repeat from * until end of row (1 stitch remaining.
2. Break yearn (leaving a longish tail,) and pass through the last loop, and tighten. This knots the yarn end.

This makes a firm, tight edge, not so good if you need a stretchy edge.
