Tomato, Egg & Tofu Stir Fry
A Chinese comfort dish: soft scrambled eggs, saucy tomatoes, spring onion, garlic, toasted sesame seeds & sesame oil.
We adapted it for our health: Stevia instead of sugar, sugar-free ketchup, added tofu for extra protein & bulk, a splash of Yondu for extra umami. Served with brown basmati, red or jasmine rice instead of white.
Tip: use canned San Marzano if you can't get good fresh tomatoes
