Classic grilled cheese & tomato soup, with a few healthier twists.

Hearty tomato soup from a soffritto base with tomato paste, canned San Marzano tomatoes, peppers, tomate frito, fresh basil, lots of herbs, homemade veg stock, Yondu, freshly cracked pepper, & cashew butter for richness. Sweetened with stevia, no added sugar.

Grilled cheese on wholewheat toast for slower carbs, brushed with extra virgin olive oil instead of butter & grilled on a contact grill.

A hearty, cozy vegetable stew.

Carrots, celeriac, onion, & garlic are sautéed in olive oil, deglazed with homemade veg stock, then simmered with herbs & bay leaf.
Air-fried Brussels sprouts, bell pepper, & potato are added.
The stew is partially blended for body without added starch.
Served with a small portion of chickpea pasta, halved vegan “meat”balls & green onion rings.

Precooked, overnight-chilled potato & legume pasta were used to reduce fast carbs.

Tomato, Egg & Tofu Stir Fry

A Chinese comfort dish: soft scrambled eggs, saucy tomatoes, spring onion, garlic, toasted sesame seeds & sesame oil.
We adapted it for our health: Stevia instead of sugar, sugar-free ketchup, added tofu for extra protein & bulk, a splash of Yondu for extra umami. Served with brown basmati, red or jasmine rice instead of white.
Tip: use canned San Marzano if you can't get good fresh tomatoes
Same soul. Same taste. And deeply comforting.

Today we made a Ribollita-style stew.

Lacinato kale, root vegetables, herbs, garlic, potatoes, Borlotti beans and San Marzano tomatoes mingling in a hearty veg broth.
Served with fresh herbs, Parmigiano Reggiano and slices of crispy whole wheat bread brushed with olive oil.

Hearty, flavorful, fresh, and cooked with a gentle nod to healthier choices.

Today we made Paneer Tikka Masala, with brown basmati rice, home made paneer and store bought papadam. And we used cashew puree to substitute the cream.

It was super delicious and pretty healthy.

Some tasty, yet improvised food for you!
I planned a Tuscan Ribollita with Cavolo Nero, but my ciabatta was moldy.
So I turned it into a Ribollita-style pasta instead: all the Tuscan vibes, hearty kale, veggies, Canellini beans, tomatoes, garlic and herbs.
Saucy rather than soupy.
To keep the spirit, I topped it with crunchy, garlicy panko crumbs instead of toasted bread. Slightly smokey as well, by using smoked paprika.

It's with a special version of Quark which is a fresh cheese but different ;3

Bottom is short pastry then Schichtkäse with sugar, eggs, cream, lemon zest, lemon juice, vanilla extract and topped with crumbles.

150°C for 20 minutes, we'll see how it goes...

Let you know when something burned down.
