First ratatouille of the season is in the oven in my favorite handmade pottery casserole dish. ☺️

All the usual stuff plus summer savory, fresh thyme sprigs. 🤤

@ytetic yup! I don’t love tomatoes, so I don’t like a heavy tomato stew version. I do layers of eggplant, tomato, and squash with herbs etc with bulgur wheat on the bottom to absorb all the veggie, herb, white wine, and olive oil juices that sink down.

Then into a 350F oven for an hour or a bit more.

@ytetic and also—any softened and flavorful bulgar wheat that doesn’t get eaten becomes a perfect addition to meatballs instead of breadcrumbs. 🙂‍↕️
