This is my first season and I started late (last Thursday in the Twin Cities). How do you tell when it gets "buddy"? I only have sugar maples.

@Okanogen Leaf buds will start to swell. Sap may turn green, but I test small amounts in apot on the stove. Smell of the steam and flavor will let you know. For me, it makes an awful taste on the sides of my tongue at first taste. Sugars will go quite a while before going buddy. You probably have until first week of April there.

Thank you thank you! I think i may get only a little over 30 gallons of sap this year, but next year I will tap another 7 or 8 trees and start earlier. Hoping to get 100 gallons.

@Okanogen Careful! Before you know it you'll be looking at big drop flue pan evaporators, reverse osmosis, filter presses.... 😀
