I had butterbeans and veggie sausage stew with rice

I’m not vegetarian, but that sounds delicious! How did you make it? I’m always looking for easy meal ideas, and I’ve come to decide that meatless meals are so much easier than meat meals.

Not OP but I make a pretty similar dish. Brown your sausage (veggie or otherwise), saute some onions and garlic, throw in a can of fire roasted tomatoes and the beans, some broth and spices, cook it down to your desired consistency.

I do it with chicken, vegan chorizo, cannelini beans and a good bit of smoked paprika for 15 minutes in the electric pressure cooker. Tasty and quick meal prep

No problem! I use a cup of broth per can of beans and you can switch up the bean types, proteins and spices to make some variety. You don’t even really need to brown the meats (or “meats”) first, it’s just a little tastier that way. If you skip it, you can be eating in like 30 min if that’s your desire.
Haha yep that’s pretty much the same! Only I reduce the sauce before the beans.
Lentil soup with a simple salad here.

Salted and boiled cod with boiled potatoes and steamed broccoli. Topped with warm butter. Somehow my kids love it.

My cats are currently nagging while waiting for their turn.

That’s a “down home” meal for me what people call comfort food. Makes my mouth water just thinking of it.
I had boiled Pumpkin which I didn't eat yesterday and IKEA noodles in shape of elks with canned tuna which the children didn't like.
We had corned beef and cabbage last night, and tonight we’re having lemon pepper chicken drums with grilled corn and veggies.
We had some tortellini. Nice and simple dinner.
Uuuh nothing, and I’m still not losing weight :(

I'm thinking I'll make some pancit bihon (Filipino rice noodle dish). Its leftovers are my favorite for breakfast.
Oh delicious. I used to work at a big park in western Canada and every Sunday Filipino community would gather for lunch. Always so friendly they would come find me and invite me in for food. So many good cooks. I learned to make so many delicious things from that wonderful group of people.

I haven’t considered pancit for breakfast but I thank you for the idea. That does sound good.

I live in a city with a large Filipino community, and it rocks because nearly every restaurant (doesn’t matter it’s Italian, Mexican, chicken joint, or sports pub) will have lumpia on the menu. That right there is KittenBiscuit crack.

Chicken Chow Mein but with tons of fresh veggies. Made from scratch including noodles and stock.

My homemade tuna salad is tuna, soy sauce, mayo, celery, and onion. Copycat Jimmy John’s recipe. Bread is homemade, King Arthur classic sandwich loaf recipe. And the finest Wisconsin American cheese that money can buy at Woodman’s.

Frozen fries because I’m lazy today.

My honey flies in tonight and we leave in the morning for a long weekend trip. Probably having takeout (maybe pizza?) while we do laundry and pack.
I have hamburger to use up, so I’ll probably make meatloaf. I have aluminum trays that are perfect for the 2 of us, so instead of one full size meatloaf, I make several little ones. The extras go in the freezer, then can go straight into the oven the next time I want one.

I made some Orange chicken, steamed broccoli and white rice.

All of it is low sodium (I have to eat low sodium for medical reasons) and the chicken was baked instead of fried to keep things from getting too unhealthy

Tacos 3 ways: carne asada, pork al pastor, chorizo. Served on scratch corn tortillas with house fermented salsa.
A couple chickpea “tuna” sandwiches with some homemade tofu mayo.
I’m veggie, how do you do the tuna? I’m not a good cook so I haven’t dared try
Chickpea Salad Sandwich It was more like potato salad without potatoes. But I imagine seitan would give a better tuna like texture.

I made a healthy-ish chicken tikka masala. It was OK. I really need to find a good real recipe because the lighter versions I’ve been trying just aren’t scratching the itch for the real thing.
Have you tried the recipes community? It’s quiet but if you post people unlurk. They gave me some great ideas
Made a chili with Guinness in it that I’m finally getting to sit down and enjoy. Totally worth it. :)

Weeknight pasta. Beef, onion, san marzanos, olive oil and spaghetti.
Shakshouka: eggs cooked in a tomatoes and bell peppers sauce, with melted cheese (I used moz’) and siding some bread.
Just finished making Chnöpfli (Swiss variant of Spätzle) with asparagus and salad. I was feeling nostalgic for a dish my grandmother used to make when I was a kid.

The whole sweetcorn was drying out and the cabbage was wilting so I ate sweetcorn, steamed in its leaves in the microwave, and a super quick blanched pickled shredded cabbage. Not really a meal, more of a human garbage disposal event. I hate wasting food.

At an educated guess, I went to lift a heavy table top but standing side on rather than facing it. I loaded the facet joints rather than the discs of my spine. As such I smooshed a facet joint around my T9 vertebrae which triggered a cascade of nerve problems and muscle spasm through my right side thoracic spine. I’ve woken up in 80% less pain today. My protocol of two valium (10mg diazepam), some magnesium pills, a foam roller and a massage ball seem to have taken the brunt out of it. I’m still sore but I can move around without lots of pain.
Blimey mate that sounds rough, people don’t understand chronic pain till they’ve had it. Glad it’s improved fingers crossed it levels off soon.

Hurt like all fuck yesterday. I reckon the heap of magnesium tablets I took really sorted it out more than I expected them too.

On chronic pain, if someone hasn’t experienced it I don’t want to hear their opinion on it.

Totally agree. I’ve lost count of how many times I’ve told someone I can’t do XYZ and they have said “no it’ll be fine”. Yes I might be able to do it, but I’ll pay with pain for hours or even days.
