Home canners and preservers, I'm in need of advice.

I planted a couple of Parisian Gherkin plants with the intention of making pickles and thus far my plants have produced... A single cucumber.

What... Do I do with it? My understanding is that with pickles you want to pick and process the same day. Is there a way store it until I get enough for a batch? Whenever that is? There aren't even any other female flowers on the plants. Should I just eat the cucumber?

I would eat the cucumber and (if you're committed to picking something) pick up green beans or asparagus (or gherkins) at a farmers market.

Alternately pick up "reinforcement gherkins" to fill the jar, and see how your garden gherk compares to the rest after pickling. Could 'mark it' in the jar using a piece of string or something.

Your gherkin is adorable and reminds me of every attempt (3 years) that I've made to grow peppers where I instead grew a *single* pepper.
