Step 1: I’m marinating the chicken. I’m using chicken thighs (no bone) and it’s in a mixture of water, salt, white pepper, ground ginger, and sesame oil.
Chicken is now coated in panko and corn flour. Waiting for the oil to heat to for the first fry…

Omg this is so good. The chicken is perfectly moist and cooked!

Next time, we’re going to aim for more of the classic “olive” chicken - more white pepper, a little more salt, and a touch of Sichuan pepper for the marinade, then no sauce. The chicken is moist enough that I think it can carry it.
