When you’re crazy busy in the kitchen (of a crappy restaurant), you sandbag. Meaning you prepare extra food than is needed because you know the order is coming so you’re cooking in anticipation of the next order. If by “surge pricing” they would discount during the chaos, they’d probably make more money.
