Remember I was telling you about soaking beans? The guy who sold me these swore they didn’t need it, that I should just boil them at high temperature for ten minutes, discard the water, then start the soup. He was right.

Was the bean seller meaning ALL beans just need a ten-minute boil first, or this particular variety?

@aehdeschaine Traditional Greek fasolada.
This variety, and in part because they were so fresh. He was the grower, too.
Mind you, I have heard of something like that as a substitute for soaking. Maybe search the internet a bit?

@CommonMugwort Excellent, thank you! I often resort to canned, but I've been thinking about your thread and got some dried so I can practice and be able to rely on the technique. I'll check this out!
