Remember I was telling you about soaking beans? The guy who sold me these swore they didn’t need it, that I should just boil them at high temperature for ten minutes, discard the water, then start the soup. He was right.
@aehdeschaine Traditional Greek fasolada. This variety, and in part because they were so fresh. He was the grower, too. Mind you, I have heard of something like that as a substitute for soaking. Maybe search the internet a bit?
