Why is it that, sometimes, plant-based ice cream is virtually identical to dairy-based ice cream in every way, but, other times, it is as if someone mashed a coconut into an impenetrable brick the shape of an ice cream container?

@ChangJustin someone needs to teach the people who make the second kind some better chemistry-physics then.
@nealjennings shotty not. I hate teaching things that involve calculations because I know it's hard for students, but I just don't know *why* it's hard for students.
