Any time I watch a #PastaGrannies episode and they manage to go through the whole episode without using animal products in the final dish (as far as I can tell) I add it to my "Pasta Grannies but Vegan" playlist. Americans don't think of Italian cuisine as being vegan friendly because we tend to emphasize the heavier side of the cuisine. Also because we don't eat Italian food the traditional way with multiple courses, meat and pasta are combined into one dish. There's also a common misconception that pasta always has egg in it, even though the pasta on our store shelves usually don't. Many Americans have such a narrow conception of what Italian food is despite the apparent popularity.
Same goes for other dietary restrictions. If you don't like carbs or you can't have gluten, that doesn't eliminate all Italian food because it's not all pasta! Like I've mentioned before, farinata is a better gluten-free pizza than gluten-free pizza (it's also usually vegan).
@thomasjwebb [looks up farinata] whaaaa? why I have never seen this before?
@left_adjoint there's also the French equivalent which is a bit creamier, socca. And there's also panella which is kinda similar but fried - basically a square or triangular, Sicilian variant of falafel. All really good if you like the flavor of chickpeas.
@left_adjoint I think the lack of chickpea flour means that Italian dishes that use it didn't tend to make it into Italian-American cuisine. Somehow farinata did catch on in Argentina.
