May I throw in Etsy as a nice source? Licensed and non-licensed alike.
Currently there are shirts and patches and stickers.

What I really need is a big ass plush. If I get desperate enough I may have to find a similar pattern, adjust it and sew one myself. (Mind you, I know how to operate a sewing machine and I have sewed stuffed animals before, but I am by no means an expert in adjusting patterns. Imagine my level of current desperation that I'm already thinking about it though. LOL)

Crocheting an animaguri Moopsy seems the logical option, but won’t create something truly soft and plush.

There definitely are official Pikáchu crochet and sewing patterns that seem to be natural places to start to create a Moopsy pattern.
