Hi 👋 I'm trying to get my local #climate org to join mastodon. They sounded excited and want some resources to read about the advantages of mastodon so they can decide if it's a good fit. Please reply with some links I can send their way and also server recommendations are appreciated.

I'd say to them that they probably won't reach many people in Sacramento yet - but that starting a presence on Mastodon is an investment and it's best to start asap and start small rather than waiting for the perfect time.
Whatever energy you invest into Mastodon and however many people you link with is yours forever. Even if the server you choose disappears you can move to another one. With commercial social media it can all be taken away tomorrow.
