Here's one design I've actually made several of and used a lot. It's a little table-top A-frame with adjustable clamp. Glue & dowel assembly.
Made the knob using my drill press as a lathe. A stainless steel bolt is inside.
Never found a good source for metal brackets for the leg. Or any decent way to make them.
