One of our all time favourites, a frittata with a rainbow of bell peppers, tomatoes, feta cheese and black olives, covered with an egg sauce. It takes a little time to prepare but we just love it.

What's a frittata? Is it like a pizza? Where are you based in Europe?
It‘s like a quiche without the dough, so the egg sauce keeps it together. I’m in Germany but that doesn’t matter as I mostly don’t cook German food.
Which food do you cook? I am a huge fan of Italian food!
Lots of Japanese these days, that cuisine has taken over. It used to be a more balanced mix of Indian, and whatever European cuisine I fancy. You can class it all under “fusion food” I guess 😅
Indian food is very very diverse. Being an Indian, I can say there's Punjabi food, Gujarati food, South Indian food, Bengali food (famous for sweets), which have sufficiently different flavors. India is definitely heaven for foodies! :) There are many more.
Sadly, I don’t know much of the differences and most of the recipes I used are probably made for the western cookbook market. These days I try to find more inspiration via websites from people who do what seems to me proper Indian cooking but the problem are the ingredients. I have a well stocked spice cupboard but regional vegetables are hard to come by and I have to replace them with what I can get here. That’s why it’s always fusion food. 😅
