Any brain/neuro scientists out there that can explain this?

I rarely buy potato chips but when I do, I like to get the salt & vinegar flavored variety.

So I’m munching away & I notice nothing out of the ordinary. Then I read the bag & it says just “sea salt”. (So not salt & vinegar—huge difference).
But it was only AFTER I read the bag more carefully did I no longer taste the vinegar. Not knowing otherwise, I must have replaced the vinegar taste in my mind. Right? Huh? Weird.
