Today I made low-carb pizza for the first time.
Today, (coincidentally) I also made low-carb pizza for the last time.

@Saltssaltgirl Been there, done that. It actually wasn't bad but so much work making a cauliflower crust.
@caryn I didn’t make a cauliflower crust. The crust was mozzarella cheese, almond flour, baking powder, xanthin gum, and eggs.
@Saltssaltgirl I think I may have made one of those too a few years back. The cauliflower one was better but they're both a lot of work. My daughter just gets a regular pizza and only eats the toppings. I don't think I'd have that much willpower to not eat the crust!

IT'S NOT JUST CHEESE! :-)

It has sauce (I made great pizza sauce), lebanon balogna (which is like really good summer sausage), pepperoni, mushrooms, black olives, three kinds of cheese (mozarella, swiss, and parmesan), and bacon bits on top (to help the cheese brown).

@Saltssaltgirl I ate a gluten-free cookie once and learned that gluten is a very important ingredient in cookies.

@Saltssaltgirl @nineball Depends on the cookie. My brutti e buoni (italian almond cookies) have sugar, egg white and almond meal and taste just fine thank you.

@Saltssaltgirl Capellos almond crust pizza is the least bad that I have had. After adding extra cheese, it scratched the itch.

That's too bad. There are some cauliflower crusts that taste totally fine. I like to put extra cheese and pepperoni on them.

But some of them it's like the people who taste tested it don't know what pizza crust is supposed to taste like. 🤢

@DXMacGuffin it wasn’t cauliflower. The cauliflower crusts tend to be gluten free but not necessarily low carb.
@Saltssaltgirl I bet it tasted so cardboardy that cats would want to jump in it.
@Saltssaltgirl Capello's makes a credible keto pizza. I pile it with lots of toppings. Note I did not say "incredible" -- as a diabetic, I know my low-carb pizza choices.

@Tweetfiction No. I made a homemade crust using mozzarella cheese and almond flour.
@Saltssaltgirl Ah, the "Fathead Dough" recipe. I kind of like it. My wife hates it. You might try Cauliflower, it's got a little more texture.
