After three or four years of owning one, I have finally begun to use my Instant Pot as something more than awesome rice cooker. Last night's experiment was making sauce (from scratch) and pasta in a single pot. Not bad! Flavor wasn't as rich as my traditional sauce but getting it done in 45 minutes and with just one pot to clean is a win. B/B+.
@ihnatko do you have instructions that you followed? My attempts at doing pasta in instant pot always undershoot or overshoot al dente.

@ihnatko Soups are awesome to make in the Instant Pot. Servings for my family of three can be a bit much, so I halve many recipes, but just about everything we try is grade A to B.

@ihnatko Everyone in the family want’s me to bring my Instant Pot barbecued pulled pork recipie to events. And yes, we make pasta and sauce often too. Works great for that. Beef stroganoff with egg noodles also cooks up great in the IP.

I haven't actually kept track of what the trigger is that leads me to make ragù Bolognese year after year, like clockwork. Good thing I love the stuff. This year, in the midst of some epic pressure cooker testing (stay tuned for the results), I decided to see if I could adapt the recipe to work in a pressure cooker, hopefully cutting down on cooking time while building flavor in the process.

@ihnatko Agree! A couple things I have noticed. First, It's really easy to turn things into mush (with great power comes great responsibility) and second, what you think you knew about how to season your favorite recipes needs to be amended.
@ihnatko I made a keto-diet crack chicken recipe in mine last night, and it came out delicious. I've also made Mexican rice, Pad Thai, creamy mac and cheese, and even rice pudding in mine. I'd agree that sometimes it doesn't come out as good as when I cook in other more-conventional ways, I'm almost always quite satisfied with the result, and very happy with the reduced cooking and cleaning time!

@ihnatko I use it all the time for pot roast. I had a dinner party last night. Given I'm in Vermont I figured it was time for the locals to taste Mexican food.

So, I used the Instant pot to cook a 2-pound top round roast to shredding perfection. Then I simmered that in its juices with a blend of yummy Mexican spices and herbs. Hint: Roasted Paprika is OMG.

They loved it. Except for Jerry. Why Jerry had to eat a meatball sub for lunch before my early dinner, I don't know. Jerry had rice.

@ihnatko agree with all of this, also I’ve found that recipes that are a B in a slow cooker can become an A with an instant pot. The fast pressure cooking is better at keeping ingredient flavors separate and sharp rather than blending and dulling them, while still getting everything tender and cooked through. Something like stew or curry can really benefit.
