its way hotter. not fermenting the manzanos means they dont lose any heat in the brine.
unspiked will be decently hot. spiked is gonna be a madman.
first batch has been whizzed and strained.

so after cooking, it goes into a commercial sauce pump. its still too hot to touch so i gotta use grilling gloves when pouring. inside the sauce pump is just a 64oz ball mason jar
then, they immediately get dunked into a cool bath. they stay there until theyre cool enough to handle, then straight into a dedicated chest freezer (iceco!) to freeze. they get shipped frozen.
phew, holy crap. all done!
all the sauce is in the freezer and the kitchen is mostly clean.
been at it for 6 hours.
blew past the sushi dinner we had planned, but fortunately the good burrito spot is still open, so im gonna test out the spiked variant tonight :D
tomorrow we'll catalog all the bottles and add them to etsy, along with AM9, 'headcrab', the most recent spice blend.
just went into the freezer to take inventory.
