I think the thing I was most impressed with, when I interviewed different security personnel at my company, was both the wide diversity of backgrounds, as well as the emphasis from our CISO on the ability to learn, think, and apply knowledge over route certifications or checklists.

I'm biased, but I'd try to find a boss like that -- one who appreciates their employees thinking and taking initiative, one who's good with mentoring so long as you're genuinely curious -- if you can.
