@TrillionPixels That's just "pot liquor" you get with any greens! It's a ton of onion and garlic sauteed, then a splash of veggie stock (1-2 tbsp) and some hydrated dried Hatch peppers. Throw the greens in and then the stock, and it seems to dry up, but the greens release their own water and mixes and you get deliciousness. They're good, peppery and bitter, which is why the onions cooked until sweet went well with it!
