YOU NEED ONE DAY FOR EVERY 4 POUNDS TO SAFELY DEFROST IN YOUR FRIDGE.

If your turkey is still frozen, and it's more than an 8 pound bird, consider keeping it frozen and buying a thawed/fresh turkey instead. You probably want it thawed by tomorrow anyway, so you brine it, right?

@amtwo @kitzfuhel Can you get good green chile up there? Hatch, not that canned shit. Anaheims or even poblanos could work. Because venison makes a wicked green chile stew.

The rest of the "almost always" is jalapenos, Fresnos, habaneros, and Serranos.
The "sometimes" peppers vary wildly, but don't usually stray very far.

This recipe is a classic. I add a bit of fish sauce at the end for umami. I think you could make a quite tasty version with a pepper mix from your grocer.
