I get so anxious when it's 2 days before Thanksgiving and people are asking about defrosting their 15 pound turkey.

YOU NEED ONE DAY FOR EVERY 4 POUNDS TO SAFELY DEFROST IN YOUR FRIDGE.

If your turkey is still frozen, and it's more than an 8 pound bird, consider keeping it frozen and buying a thawed/fresh turkey instead. You probably want it thawed by tomorrow anyway, so you brine it, right?

@amtwo avoiding all this drama with a brisket
@AgnesoftheDogs I'm doing deer!! 🦌
@amtwo Seriously?

@AgnesoftheDogs ayuh.

Kenji's Dad hunts.

@amtwo Venison is tasty. How are you preparing it? What are your sides?
@amtwo I’m a Thanksgiving menu voyeur
@AgnesoftheDogs this is my menu!
@amtwo @AgnesoftheDogs one side we're having I'll try is Brussels Sprouts with bacon. I'm looking forward to fighting everyone for the pecan pie smothered in whipped cream
@amtwo Oh lovely! We are having butternut squash bisque, a simple salad, crusty rolls, smoked brisket over mashed potatoes, red chile (so good over mashed potatoes), green beans, and apple crisp for dessert.

@AgnesoftheDogs that run sounds amazing.

I need to get dessert still, but just planning on walking into Whole Foods tomorrow and grabbing something we'll like. #LivingDangerously

@amtwo Well, the venison & roasted root veggies sound exquisite. I love venison.

I’m so happy we are still long-distance friends! Please say hi to Kenji and give Elphaba & Daisy extra scritches.

@AgnesoftheDogs tell him yourself!

@kenji

@amtwo @kenji
HI KENJI
I HAVE MISSED YOU
AND THE PUPS
@amtwo @AgnesoftheDogs I made a “Venison Bourguignon” once and used wild boar bacon for the lardons - recommended for another time you get venison.

@kitzfuhel @AgnesoftheDogs there's more in the freezer! Both houses have deer in the freezer!

I left most of the stew meat up there for a snowy weekend. 🦌❄️

@amtwo @kitzfuhel Can you get good green chile up there? Hatch, not that canned shit. Anaheims or even poblanos could work. Because venison makes a wicked green chile stew.
@AgnesoftheDogs @kitzfuhel I can almost always get poblanos, and usually anaheims, too to my grocery store
The rest of the "almost always" is jalapenos, Fresnos, habaneros, and Serranos.
The "sometimes" peppers vary wildly, but don't usually stray very far.

@amtwo @kitzfuhel

This recipe is a classic. I add a bit of fish sauce at the end for umami. I think you could make a quite tasty version with a pepper mix from your grocer.

Green Chile Stew from The Pink Adobe (Hatch Chiles!) | Shockingly Delicious

A fragrant, flavorful, comforting, authentic pork stew from the Pink Adobe Restaurant in Santa Fe that showcases Hatch green chiles from New Mexico.

Shockingly Delicious
@AgnesoftheDogs @kitzfuhel that looks phenomenal
@amtwo @kitzfuhel It is *very* simple, very flavorful, and absolutely delicious on a cold night. I make it with elk and/or venison.
@AgnesoftheDogs @amtwo @kitzfuhel believe it or not, Hatch green chile is available all over the place now! I used to live in NM, and was afraid I'd miss out, but the chain grocery store less than 2 miles from my house in Ohio carries it now (for a limited time window)!
@mikebaz @amtwo @kitzfuhel That’s great! You should make that green chile stew, it’s delicious. So simple and just perfect.
