@GenOlivier We had a red pepper and spinach quiche with a baked potato crust. It was really tasty! Even my 8 y.o. ate it! 😮

@GenOlivier I've made it before with shredded potatoes where you spread the shreds out across the bottom and up the sides of a pie pan, dot with butter, and bake til browned, then add egg mixture and bake til cooked through. This time I experimented with using mashed potatoes smeared across the bottom and up the sides of the pie pan, baked at 375F til browning at the edges, before adding the egg mixture. Both work well!
