@GenOlivier just not feeling it this evening, so I sliced a baking potato into wedges, slicked some oil over them, and baked until they were cooked through and crispy, liberally sprinkled them with nutritional yeast, and had a big ol' bowl of ketchup to dunk them in. Now slurping a mug of tea.
@GenOlivier We had a red pepper and spinach quiche with a baked potato crust. It was really tasty! Even my 8 y.o. ate it! ๐Ÿ˜ฎ

@GenOlivier I've made it before with shredded potatoes where you spread the shreds out across the bottom and up the sides of a pie pan, dot with butter, and bake til browned, then add egg mixture and bake til cooked through. This time I experimented with using mashed potatoes smeared across the bottom and up the sides of the pie pan, baked at 375F til browning at the edges, before adding the egg mixture. Both work well!
@GenOlivier Best spouse in the world is making trout, shrimp, roasted mini potatoes, and green beans because I've had a tough day.

@GenOlivier ooh we put maple syrup on it! A quebecois tradition I am told.

@KatyMackay that sounds really good. Itโ€™s been ages since I have made quesadillas and I love a good Mexican inspired soup.
@GenOlivier I love this one because itโ€™s so cheap, fast, and easy: 2 cans of black beans, a chopped onion, a couple of cloves of garlic, a cup of veggie broth, a big scoop of hot salsa, some cilantro, cumin, squeeze of lime. Simmer, puree, eat!
