watchOS 6 lets you delete many previously unremovable stock apps but some, like Heart Rate and Messages, will remain

Apple's apps like Alarm, Timer, Stopwatch, Remote, Camera Remote and Radio, as well as health apps such as ECG, Breathe, Noise and Cycle Tracking, can be removed in watchOS 6.
